It’s officially October which means it’s officially “All Things Pumpkin” season. Not that I haven’t been embracing pumpkin everything since Labor Day weekend ended…. errr, or a couple of weeks before that. But that is besides the point! September may be all about getting excited for the pumpkin fun, but October means business.
Last year I shared 5 pumpkin inspired recipes in 5 weeks. I had so much fun doing it that I decided to repeat the fun this year, despite the husband protesting. Over the next 5 weeks I plan to share a pumpkin inspired treat with you once a week. From cakes, to cookies & breakfast items, there will be a little bit of everything.
Week #1 starts with one of my new favorites, New England Pumpkin Cake.
I love how simple this recipe is, but that it doesn’t lack the flavor and quality of something made from scratch. I have tried A LOT of pumpkin breads and cakes, most of which use cake mix bases, but this one by far surpasses all of them. It is so good and so easy.
With National S’more Day only 4 days away we are searching high and low for delicious ways to celebrate.
Because as much as I love a campfire, sitting around one in early August has absolutely no appeal to me. I knew the best way for us to celebrate was to put a new twist on a classic treat.
There are approximately 4 flavor combos that are guaranteed to win you some major points with me. Pumpkin spice, coconut (no globs of shredded stuff please), lemon or key-lime, and s’more. Today’s post is all about that magical last one and celebrating the holiday, that celebrates it.

I have talked about my love for caffeinated beverages frequently on this space. They get me through my very early mornings, late nights, and days that end in the letter y. True story. Where you may think that my love for warm drinks ends with coffee, you couldn’t be any further from the truth. I happen to be a huge fan of hot tea. There is just something so cozy and inviting about a cup of tea. Anytime I go to fix myself a cup of tea I almost always find Russ requesting one too. Hot tea is just one of those things that brings people together.

I’ve said it before and I will likely say it again, in our house PBJ is always on standby. Especially when it comes to our oh so sweet and oh so pick Emily Elizabeth. It’s funny to me that some how we ended up with one kid who eats everything and another who lives on peanut butter and jelly.
