Happy National S’mores Day!

If you’ve been following us along you’ve probably seen the reminders and warnings I’ve been posting that today was coming.

I’ve said it before and I’ll say it again. I think s’more is the new pumpkin spice. You don’t have to look long or hard to find s’more flavored everything. It is a fantastically wonderful problem friends. Today I have teamed up with some of my best blogging pals to share some of our favorite s’more inspired recipes.

I have been looking forward to this day and these recipes for months now!

For my recipe I chose to go with a s’more cookie bar. Beth fact: I love cookies. They are my favorite go-to dessert for any and all occasions. These cookie bars have a graham cracker crust, a chocolate chip cookie dough batter and plenty of marshmallows and chocolate. They are easy and quick to make and kid approved too!

  1. 3/4 cup graham cracker crumbs
  2. 4 tablespoons butter, melted
  3. 3/4 cup sugar
  4. 1/2 cup brown sugar
  5. 1/2 cup butter, softened
  6. 1 egg
  7. 1 teaspoon vanilla
  8. 1 1/4 cup all purpose flour
  9. 1/2 teaspoon baking soda
  10. 1/2 teaspoon salt
  11. 1 cup chocolate chips
  12. 1/2 cup mini marshmallows plus a few extra for the top
  13. 1 regular sized milk chocolate Hershey Bar
  1. 1) Spray a square baking pan (I would use a 9x9 or an 8x11). If you want to guarantee no sticking, line with parchment paper.
  2. 2) Combine graham cracker crumbs with melted butter and press into the bottom of the pan to form the crust.
  3. 3) Cream softened butter, add in sugars and cream again until light and fluffy. Add in the egg and vanilla and mix again.
  4. 4) Combine flour, baking soda and salt and pour into the mixture. Stir until combined. Then fold in the chocolate chips and marshmallows.
  5. 5) Spoon mixture evenly over the prepared crust. Spread as evenly as possible but don't obsess over making it perfect.
  6. 6) Bake at 350 for about 20 minutes
  7. 7) About 8 minutes before the bars are done, sprinkle a handful of marshmallows on top and return to finish baking.
  8. 8) When finished remove from the oven and use the broken candy bar pieces to decorate. *TIP if you want them to stay perfect and not melt while decorating try freezing the candy pieces while baking the bars .
  9. 9) Cool completely before cutting if you want them to look extra pretty. If not, dig on in. I waited as long as I could.

If there is one thing that we love to eat at all times of the day in this house, it is cereal. For breakfast, on yogurt, dry, as a bed time snack. We just can’t seem to get enough. There are simply no limits to when this treat may pop up. Today I want to introduce a new product from Post Cereal, Kung Fu Panda Po Power Crunch, and share a fun creative way to make your cereal into something out of the ordinary, a cookie.

These tasty cereal cookies are crunch & sweet with nuts, coconut and fruit in them too. They are a great cereal anytime snack and put a fun and unique spin on a family favorite.

I knew the girls would be thrilled when I arrived home and I couldn’t have been more correct. Emily was begging me to let her dig into the Berry Colossal Crunch before I had even made it in the house. “I’m gonna eat that whole bag all by myself mama!”

I love bringing home treats for my family that give them great big smiling faces. Sometimes achieving that can be tricky since everyone seems to love something different. Kung Fu Panda Po Power Crunch is a new product available at Wal-Mart. The chocolate puffs with the fun marshmallow shapes made it an instant favorite of the girls… and me. There is just something about this cereal that I can’t stay away from. “Sorry kids, mom ate all of your cereal.” They’ll forgive me, right?!

Since we ended up loving the cereal so much I thought why not turn it into a fun treat for the girls. I had an idea that I thought just might work so I got busy in the kitchen with lots of “help” from Emily.

  1. 3 Heaping Cups Kung Fu Panda Po Power Crunch
  2. 4 T Unsalted Butter
  3. 1/4 Cup Honey
  4. 1/4 Cup Brown Sugar
  5. 1/4 Cup Unsweetened Coconut
  6. 1/4 Cup Slivered Almonds
  7. 1/4 Cup Dried Mixed Berries
  1. 1) In a pan on the stove over medium heat mix the brown sugar, butter, and honey until the butter is melted. Allow to lightly simmer for 2 minutes then set aside to cool for about 10 minutes.
  2. 2) Mix the cereal, unsweetened coconut, almonds & mixed berries in a bowl.
  3. 3) Pour the syrup mixture over the cereal mixture and gently stir.
  4. 4) Press into the bottom of a greased 8x8 pan and allow to cool for at least 20 minutes.
  5. 5) Cut into bar shapes and enjoy

I expected them to be good, but they turned out even better than I had hoped they would. The chocolatey crunch with the coconut flavor, sweet chewy berries and crispy almonds equal out to be a treat that the parents and the kids will both love… just like the Kung Fu Panda Cereal.


I have a feeling that these treats would be equally tasty if I had made them with the Colossal Berry Crunch too. We’ll have to put that on our short to-do list this week. After all, our first batch of Po Power Crunch Cereal Cookies didn’t last long.
