Tangerine Yogurt & Fruit Parfait Recipe

I’ve said it before and I’m sure I’ll say it again because every single time I do someone is surprised. I haven’t always been an active person. I started running in August of 2013 just a few months before I started this little corner of the blogging world. So if you took a close look around here, you wouldn’t really find any evidence of my previous life as a couch potato. Over the past 3 years I have learned that living an active lifestyle is hard work, but work that is so worth it. I have also learned that there are countless ways to make good choices to benefit your health and today I want to share with you a favorite product of mine and a tasty way to use it.

My love for this product goes way, WAY back. I have been picking up Emergen-C for years now. I stumbled across it in the vitamin aisle on a whim one day and have been a fan ever since. When I noticed we were running low the other day knew it was time to pick some more up. It’s became a part of my routine that I just don’t want to miss.

We keep Emergen-C on hand year round at the Newman house. 1,000 mg of vitamin C, electrolytes, and 7 B vitamins. It’s the perfect way to start my day. For years I have been drinking Emergen-C mixed with water but recently I became a bit more adventurous and the results were too good not to share.

I created this yogurt parfait recipe featuring Emergen-C, Greek yogurt, honey, fresh berries, toasted coconut, & almonds. It was cool, refreshing, and the perfect way to recharge after an evening run, bike ride with the kids or my morning sweat session at the gym. It almost tastes like sherbet but the flavors were even better and I had absolutely no guilt eating it. It’s the little things.

Ingredients
  1. 1/2 Cup Plain Greek yogurt
  2. 1 package tangerine flavored Emergen-C
  3. 1/2 Cup fresh berries
  4. 1 Tablespoon Toasted Almond & Coconut
  5. Honey to taste
Instructions
  1. 1) Mix the yogurt, honey, and the Emergen-C together. At this point you can either chill until needed or assemble your parfait to eat.
  2. 2) Wash and chop your berries.
  3. 3) Layer yogurt and fruit however you like then top with toasted almonds and coconut.
Notes
  1. *If you would rather use vanilla Greek yogurt and skip the honey you can.
  2. *It also tastes great frozen

Staying active is super important to me but properly refueling post workout is equally as important. I love having a snack packed full of protein and vitamins to turn to. It is a healthy choice that I can feel good about, which is exactly what this busy mom needs to keep me going.
